Rockhouse’s Farm to Table Poolside Dinner Series Turns Local Ingredients Into a Night for a Good Cause

Rockhouse recently hosted its famous monthly Farm to Table Poolside Dinner, led by the restaurant’s new Culinary Directors, Michelle and Suzanne Rousseau of Two Sisters Jamaica, and o-access JAMAICA was there. We attended the Friday, August 22nd, 2026 edition, in Negril where the Caribbean Sea meets Rockhouse’s famous horizon pool, and came away with a full stomach and an even fuller appreciation for what the series stands for.

True to its name, the dinner leaned fully into its farm-to-table promise. Much of the evening’s produce was sourced from Rockhouse’s own organic garden, just across the road from the property, then paired with traditional Jamaican ingredients and techniques the Rousseau sisters have built their careers championing. Guests gathered poolside as coal fires and an open pan chicken grill did the heavy lifting, filling the night air with the kind of smoke and seasoning that signals a serious Jamaican cookout is underway.

We sat down with Michelle and Suzanne Rousseau at SkyLark Negril Beach Resort to talk about the amazing spread. Check it out!

Beyond the food, the series carries real weight for the community around it. Proceeds from the Farm to Table Poolside Dinner Series go toward the Rockhouse Foundation, the hotel’s charitable arm dedicated to transforming the spaces where Jamaican children learn and supporting the teachers who work in them. Under the Rousseau sisters’ new culinary direction, that mission is paired with a menu that reflects a modern, coastal take on Jamaican cuisine, blending Caribbean flavors with the Mediterranean influences the pair have hinted at introducing across their new tenure at Rockhouse.

As culinary directors, Michelle and Suzanne bring decades of experience preserving Jamaica’s food culture through Two Sisters Jamaica and their earlier work at Summerhouse in St. Ann. Their presence at the helm of the Farm to Table series gives the evening a sense of occasion beyond a typical hotel dinner, this is a showcase of where Jamaican fine dining is headed, prepared by two of its most respected voices.

The Farm to Table Poolside Dinner Series is proof that a great cause and a great meal are not mutually exclusive. Between the coal-fired mains, the ocean breeze off Pristine Cove, and the knowledge that every ticket supports Jamaican classrooms, Rockhouse has built an evening worth returning to, and with the series running monthly, there’s another chance to do just that.
